I want to make mac & cheese with the lg. can cheese sause.
Do I need to cook the elbow noodles if I'm mixing it with the cheese sauce and baking. cooking 2-3 large trays 200 people...suggestions please?

I would cook the macaroni, but not all the way. It will cook more in the oven. I usually make Mac and cheese the old fashioned way, but would do it with the big cans if I were cooking for that many people!
I would thin the can sauce out a bit because it comes really thick. Good idea about under cooking the pasta. I'd thin with milk and season the sauce. I'd also add shredded cheese when I combine it. If you heating in think about covering with breadcrumbs from old bread. That's what I'd do if I was using canned sauce.
