I made special chicken nachos today. Stewed chicken in pico de gallo. Monterey jack on top of the chicken. And then I made a sour cream enchilada sauce and topped the nacho and put them in the oven. A long time ago these are my favorite type nachos at a restaurant that no longer exists and nobody else does them unless you tell them how. The sour cream enchilada sauce has flour and chicken broth and butter and then turn the heat off and add the sour cream. Of course you top it with salsa or today I'm using taco sauce.
