Make a gravy using low sodium beef broth and crumble the meatloaf into the gravy and serve over mashed potatoes. Sounds like a great comfort food to me. GB, kudos to your wife for spreading her cooking wings.
I would chop it up add some crush tomatoes and some cooked penne, or even elbow macaroni. when all heated throw on some cheese.

Unfortunately, I am not. i agree that would have been perfect for this problem. I wish I liked it, but it is just not something I can eatIf you are a sour cream eater, I still vote for that to offset the salt. Would be good in the tater.
