This is result of the idea about the "Melt In Your Mouth Pork Loan" that got me thinking about a chicken version and MAN! This came out good!
I know somewhere out there someone has done this or something similar so I'm not claiming it. It just makes sense.
Baked Melt In Your Mouth Chicken
I used:
Six FROZEN, boneless, skinless chicken thighs.
1 can of artichoke hearts, drained
1/4 cup rinsed sun dried tomato's
Layer in a dutch oven.
Mixed together:
1 can cream of chicken soup
1 can cream of celery soup
1/2 cup white wine
Top the chicken, artichoke and sun dried tomato's with the soup mixture.
Sprinkled one package of Knorr vegetable dip seasoning over the top.
Baked it for 1 1/2 hours (Keep in mind I started with frozen chicken).
It was so good! I served on top of rice but I think I'll use egg noodles next time. Perfect sauce for pasta. An easy one pot meal.
