Ms. Mofet's Macaroni Salad

≈6 - 8 (≈1/2 C.) Servings

1/2 lb. Small shells pasta - cooked in salted water, drained and cooled
1 (6 oz. can) Tuna in water - drained and flaked
4 oz./1/4 lb. Extra sharp cheddar cheese - cut into small cubes
2.5 ribs of Celery - chopped small
2 - 3 TBSP. Red Onion - chopped small
1/2 - 1 bunch green onions (scallions) - white and green sliced
1 TBSP. Fresh parsley - chopped fine
1/8 tsp. salt - or to taste
1/8 tsp. ground peppercorns - or to taste
2 - 3 capfuls White vinegar - or to taste
Scant pinch Dry mustard - or to taste
4 oz. Mayonnaise - or to taste
4 oz. Sour cream - or to taste

Garnish/es Optional

1 Tomato - chop meat small (peel skin before chopping and roll into a rose shape & add parsley leaves for decoration - Optional)
Sprinkle of chopped parsley - Optional
Sprinkle of sliced chives - Optional

In large bowl add all ingredients except tomato and pasta.
Stir well to combine.
Add cooled pasta stir well.
Add chopped tomato on top of salad.

To decorate/garnish: Place tomato rose in middle and several whole parsley leaves to complete your rose. Refrigerate several hours to cool and marry flavors.

typically around here a 'pasta salad' is a minimum 2 day eating thing, sometimes 3 day.... hence I'm not fond of putting proteins aka fish/chicken/beef in the dish on day as made.



actually I dislike putting tomato in - it 'degrades' too quickly. my usual is to add fresh tomato (and other high water content stuff like cukes...) when it is re-served as 'left-overs'


regardless - need to play with the mayo/sour cream thing/ratio/whatever - that sounds to be a winner!
 
When I make pasta salad for guests it is pretty much gone with little or no leftovers.
Seeing as I also make it just for me, it can easily be a 2 or 3 day deal. Have no problem with tuna or salmon from cans, nor cooked chicken, canned or otherwise and the same goes for ham, canned or otherwise.

I agree with tomatoes and cucumbers on the side, yes, too wet to ever leave in.
 
It never lasts very long so I don't have a problem with tomato. It never gets to wet.
 
This also sounds amazing! I need to go to the supermarket this weekend, so I can pick up a few things for it! Plus, your presentation is really pretty!
 
This sounds really good MsM. I personally think the tomato is a good idea because pasta salads of any kind seem to dry out as leftovers.
