I grilled my favorite hot wings last night using yellow hot pepper paste, Chef Merito's chicken seasoning and a sprinkle of ground cumin.
The raw wings are prepped by smearing them in the pepper paste and letting them sit in the fridge for a couple of hours before sprinkling them with the chicken seasoning. I then lightly dust the wings with the ground cumin before putting them on the indirect heat side of the grill.
They grill at about 325 to 350 degrees for about an hour or so until the skin gets nice and crispy. These wings come out with an excellent level of heat (spicy but not overbearing) and the cumin gives them a nice south western flavor.
I've tried other hot wing recipes but this is my favorite.
