I was looking for something different to do with a can of tuna. Found this in an old recipe pamphlet from Starkist Tuna. It sounded kind of weird, but it was really good! I just made sandwiches, but it would be great as an appetizer on crackers too. Enjoy!
Peanut Thai Tuna
3 tbl mayonnaise
2 tbl crunchy peanut butter
1/4 tsp curry powder
1/2 tsp fresh lemon zest (original recipe called for 1/4 tsp., I like lemon so added more, it was perfect)
1 can (6oz.) Albacore tuna
1 tbl green onion, with tops, finely minced (I used one slender green onion, didn't bother to measure)
In medium bowl, combine the mayo, peanut butter, curry powder and lemon zest. Blend well. Stir in tuna, breaking up with a fork, and onions til combined.
Garnish with additional chopped peanuts, if desired. Great as a sandwich or on crackers.
