We finished up the Mac and cheese. Veggie sides were zucchini boats stuffed cheesy breadcrumbs, and braised broccolini.

What did you have?
 
Grilled ham and cheese with a side of carrot and celery sticks.

A banana and a small handful of salt and pepper pistachios for afters.

I’ve been overdosing on celery and carrot sticks but they make an easy inexpensive salad/side. I need to up my game with some bell pepper strips, cucumber coins, grape tomatoes, etc… ?

Are they great, no.
Bit if cooked properly, they have a similar 'chew' as meat, and absorb the marinade or sauce being used. I also use them on the grill when doing a 'shish-kabob' type of a dish. Being vegetarian ( wife vegan) forces me to be as creative as possible, and always looking for new products to fill certain voids and avoid being limited by having the same thing over and over. Most dont taste like their non-vegetarian counterpart, but can be used in similar ways which allows me to enjoy similar dishes as you guys the best I can.
