Potato salad, ham, and a cucumber onion tomato salad.

Pan-fried burger with fried onions, hot pepper rings, steamed baby spinach, and mac and cheese for dinner last night.

I made homemade chicken noodle soup with carrots, onion, celery, chicken stock, and Better than Bouillon (and of course chicken and noodles). Really good!

Boat Rice - a combination of canned chicken with tomatoes and Spanish Rice-A-Roni. It's called this because it requires no refrigeration prior to making it. We used to make it while sailing.

We had fish. SO had baked cod and I had salmon en papillote (or whatever the French term is if you use aluminum foil instead of paper.). Thai cucumber salad on the side.

I wasn't feeling well, so I made my mum's French omelette with feta and scallions. Whole grain wheat toast went with that. It hit the spot.
