Man, some really good looking dinners tonight.
Sunday has become sort of special thing for my family as I get home around noon with something different every week for lunch.
Today, I picked up American cheese, long rolls, and Vermont butter, and I sliced the leftover eye round to make a couple of big "Balboas" for us to share. That
A Balboa (named after Rocky Balboa) is warm, rare roast beef on thick, toasted, garlic bread, topped with raw sweet onions and melted American cheese. Wow is it good. Less greasy than a Philly cheesesteak.
Then, my son decided to cook dinner for us. I'm not only impressed at how it came out, but also the corrective steps he took after tasting things as he went.
He intended to do a flounder sauteed in some kind of curry sauce, and coconut rice.
He decided to ditch the curry after tasting it with the other ingredients, so it was more of a soy/ginger/garlic flounder. Not great, but not bad. I was happy that he kept tasting as he went.
But then, his coconut rice was fantastic! Almost like a coconut risotto. I hipe he either remembers or wrote down what he did.
