I work in a pizza restaurant and I hate leaving the rubber spatulas in the pizza sauce because it's acidic. The boss boasts that it is "food grade" material and leaves it in the sauce. The spatulas seem to shrink a little and flake off material after a few weeks. Is pizza sauce too acidic, or is there really no such thing as food safe/safe from food materials?

Bamboo utensils are quite resilient, although they will stain if left in tomato sauce. Silicone is good, too. That said, abusing them by leaving them in a hot, acidic liquid all day will shorten the life of any cookware.

I have found that oils and fats will start to dissolve the rubber on rubber spatulas, if left on them. I haven't had a problem with silicone spatulas.

If the rubber is starting to disintegrate - it is leaving bits of rubber in the sauce. Not good.

But are they rubber or silicone?

If you have those bright white blades and handles on your spatulas at work, they are the rubber ones - I get those at the restaurant supply shops, and they do degrade, even though I don't use them in hot areas, and that would definitely speed up the degrading. I use them more for removing things from the blender, food processor, or mixer - the reason I use the cheap ones, as the blades destroy the blades, more than the degrading. The silicone ones from the restaurant supply have maroon handles, and the spatulas are sort of cream colored, and, though they stain some, the ones I have are at least 10 years old, and not the least bit degraded, nor melted anywhere.

I agree with Pepper, although not based solely on colour as I'm sure suppliers in different areas may differ.

My hunch is they are rubber and disintegrating. I have a rubber one which is not used regularly, I only keep it as backup. Lack of use has turned the rubber hard. I should chuck it but... I believe had I used it constantly the oils it would have picked up would have kept it a bit more pliable. But there is no stopping age, (yes, I just looked in the mirror, :ermm::ohmy::()

Unfortunately the boss is the boss, you can lead a horse to water but you can't make him drink. Only person who could do that would be the Health Inspector should he notice it.

I'm sure you're a handsome dude. Lol. And as far as the inspector I think every time we get sited for not enough of us wearing masks, and the boss considering Covid-19 a conspiracy, he'll probably pretend he's a victim if we ever got shut down.

Sounds like a bad situation, might keep an eye out for a new job! I hope you are at least wearing a mask!

and I accept your compliment, here, I'll take off my mask for you...

And the funny thing is we manage to have some of the highest prices in the area too. And he is charging customers more under the taxes during the pandemic to pay us $2 more an hour. I always wear my mask. Even during a month between March and now when the boss wasn't enforcing it at all. I have worked here for 5 years. I have accepted that the partners are idiots. There is constant efforts by the employees to buy them out.
