What have you had for breakfast lately?

Eggs with some white pepper and toasted sesame seed oil, salted chili peppers, and scallions over leftover rice.

Today I had Traditions meals' idea of huevos rancheros (2 egg patties covered with ranch sauce and shredded cheese, and sprinkled with corn kernels and black beans) to which I just had to add fried diced potatoes, Mexican yellow rice, pintos in chili garlic sauce and two buttered soft flour tortillas.
 
Birthday brunch at Cheesecake Factory with bacon and avocado calabrian hollandaise for me, chilaquiles for Craig. I got a free slice for my birthday so Godiva for me and Cinnabon cheesecake for Craig to go. Nap time, AKA food coma, for me because i ate both of my egg stacks, minus the English muffins on 1, and left the potatoes other than a bite or 2. Did have a couple good size pieces of their bread with lots of butter.

What's a "cheater omelette"?
It's what my mum called a French Omelette. The eggs are beaten and then poured onto a hot, buttered skillet. The eggs are slowly dragged around, allowing the fluid part to flow onto the hot pan. When it's all set to a texture you like, it's done. There is no fancy folding. If anything is added to the eggs, it's best to let the eggs set just a teensy bit and then put the stuff on the eggs before the dragging around. If you add stuff to the eggs before they are poured onto the pan, everything just falls to the bottom.
 
Ah right! Well that is the sort of omelette that the posh chefs make! I try to do that, and it ends up more or less scrambled. But done well, it's simple and delicious (and deffo worth adding a bit of cheese of course). ;-)
