1.5 cup large flake oats
1 1/3 cups low fat yogurt
1/2 cup brown sugar
2 large eggs
1.25 cups flour
2 tsps baking soda
1 tsp baking powder
1/2 cup craisins
sniff of cinnamon and nutmeg (1/4 tsp each maybe?)
Stir the yogurt into the oats and let sit for 15-20 minutes. Add sugar and eggs to oatmeal mixture. Gently stir in all the dry ingredients, just til incorporated and then add the craisins. Pour into a loaf pan. Bake in a 350º oven for about 45-50 minutes. Check with toothpick for doneness.
