Sorry, chave, I don't have the book. You might check bookstores in your area to get a look at it. Or, maybe, your local library. That's what I do when I'm considering a new cookbook or any other book for that matter.
I forgot I had the book! If you are looking to expand your knowledge of the science of baking then it is a good book. I would say it is an excellent resource for novice bakers. Mine is a 2004 edition. Make sure there is not a "newer" version on the market!
