Break down and spend about $15 to get a reliable oven bulb type thermometer like the Taylor model 5921 "Commercial Oven Guide Thermometer" - link to just one source here. This ties back into the thread you started last Feburary ... Thermometer in the oven? (merged). If you don't have a thermometer to check the actual oven temp - how do you know if your oven thermostat needs to be calibrated or not???
If you want to calibrate the thermostat in your new Wolf oven yourself ... I suggest getting a good thermometer and buying the service manual (some manuals can be found on line but you didn't say what model you have). But, you still need a good thermometer to verify any changes you make ... and you may also need a DVOM (Digital Volt Ohm Meter) and need to know how to use it. You could probably get by with an old analog VOM if you're confortable with using a slide-rule vs a digital calculator.
And, "ring-around-the-roseys" or "goose-goose-duck" again ... if you don't have an accurate thermometer how are you going to determine if your calibration is off????
