My wife really likes homemade chicken cordon bleu, so...
I used boneless, skinless chicken thighs instead of breast this time. It proved to be a bit more difficult to fit everything in and roll it up, but still tasted good. Added a side of mushroom rice (out the bag!) and some peas for a pretty good meal!
Hammered to about 1/8" - 1/4" and squirted with spicy mustard
Country ham and processed swiss cheese (grabbed both at the store when I was there to get some teething relief stuff for "the boy", he'd been crying for several hours by the time I left )
Wrapped...kinda
Rolled in seasoned cracker crumbs
