ISO a good sauce for strong fish

I am fortunate to have so much fresh fish available, but I am running out of ideas for different preparations. I catch a fish called Jurell (Jack Crevalle) that has a very strong red flesh. I thought a good sauce would minimize the strong flavor. Any suggestion?

I just did a little Bing-ing (like Google-ing but on Bing.com) and what little I found confirms your description of it's being a strong-flavored fish.

Consider soaking the fish in buttermilk for a bit to soften the strong flavor then season with garlic powder, salt and pepper.

Do you grill yours or cook in a pan or oven?
 
I have tried both grilling and pan frying.
I am not sure I can find buttermilk in the local store here in Mexico. Would yougurt be a good substitute?

We rarely have fish here since Mrs .40 doesn't like it. She doesn't mind the taste but the small bones freak her out.

I found this link to 108 fish sauce recipes. Hope you can find something worthwhile.
