Lemon Lover's cookies
Cream together:
1 cup butter-flavored crisco
1 1/2 cups sugar
Mix together, then beat into creamed sugar mixture:
1 tablespoon water
1 1/2 teaspoons lemon extract
2 Tablespoons lemon juice*
2 eggs
1 teaspoon finely-grated lemon peel
3/4 cup flaked coconut*
*Mix the coconut with the lemon juice and let sit for 10 minutes
Sift together and add to the above mixture:
2 1/2 cup flour
1 1/2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon poppy seeds (optional)
Beat at low speed for 3 minutes, scrapping bowl ofter. Drop rounded teaspoons of cookie mixture about 2 inches apart on a cookie sheet. Bake at 325 deg F. for 12 minutes or until cookies become lightly browned around the edges.
The time and temp is for the pure convection mode oven, if you bake in a regular oven. Try:
Up the temp to 350, and watch the time, may have to bake a little longer.
