I am planning on making a muffin recipe that calls to use a 12-muffin pan and I would prefer to make a loaf of bread instead of the muffins. Does anyone know which size loaf pan would be more appropriate to use for this - 8 x 4 or 9 x 5?
Either would work well. The smaller the pan the deep the loaf, and may take 5 more minutes of baking (Use the toothpick test for doneness), but besides a simple baking time adjustment, either is fine.

You might spray the pan with non-stick spray and then dust with a bit of the dry muffin mix.
