well, had a bit of coconut left and didn't know what to cook.
I decided to try some instant macaroons.
Once again, I didn't measure anything as it's a "trial" thing.
One egg white, some sugar, a touch of salt a little flour, add enough coconut to mix up so it is a big clump.
I separated mine into 2 ping pong sized balls and put on plate. I microwaved it for about 90 seconds... cook until firm.
As I like toasted coconut, I popped them under the broiler for a few minutes.
Very tasty!!!
