A recipe I'm working on. So far so good
5 lbs. pork butt
3 TBS kosher salt
2 TBS sugar
2 tsp minced garlic
2 TBS fennel seed
2 tsp black pepper
2 TBS sweet paprika
1/2 cup dry red wine
1 TBS crushed red pepper flakes
1/8 tsp all spice
1 tsp. dried oregano
Mix all ingredients and stuff into casings.
