Pickle Brine

My next culinary adventure seems to be making my own pickles.
Can't buy good bread n butters, and the pickled green beans
are a hit with me.

I do have some jars in the fridge with leftover brine. Hate to throw
it out...is it good for anything? can it be re-used?

also, any pickle experts out there, I'd love to hear you techniques/recipes.

Cappy, direct from my mamma:
5 cups water
5 cups vinegar
7 garlic gloves quartered (she just uses garlic from the jar)
7 hot peppers of choice (she uses red pepper flakes)
3 1/2tsp mustard seed
3 1/2tsp dill seed (she leaves it out for me)
1/2 cup salt
put 2lbs raw green beans in jars
boil brine and pour over beans. tighten lids, they should seal


she said you could use same recipe for bread and butters, cept you need to add 1/2 cup sugar and "some tumeric". She couldnt remember how much tumeric!

My wife makes "Dilly beans" with just leftover pickle juice. They come out fine. Claussens is the best!

I dont think it be a good idear to re-use the brine. Quit being such un pincho caverone el cheapie skate del Norte Americkana gringo and make up a fresh batch. How much could it cost? Dollar maybe? I may have to try to talk Andy and Aunt Bea into taking your bullet away

first of all, a dollar is a lot of money. You must be one those
Texas liberals that just throws money away.

second, there may actually be some benefit, perhaps added flavor
to re-using brine. Probably not, but it's worth asking.

Right...
Beans ...trim and wash.
Put in clean canning jars.
add leftover pickle juice.
Add a chile or two if so inclined.
CAN

Well the best pickled eggs come from using the leftover juice off gallon jugs of hot pickled sausage. Two old slab savers who run the pool hall over in Whiskeyta Falls back in the 60's used to do it like that. Turn them eggs red as a beet and give the best flavor you ever tasted. No refrigeration required. That also was a good motivator for folks to buy the sausages cuz as soon as it got empty the eggs went in.

What I like to do with left over pickle juice...brine some boneless, skinlees chicken breast for two to three hours and grill.
