Snow Pea Salad

Blanch 1 box fresh snow peas 2 minutes in boiling water.

1 head RED leaf lettuce, washed, dried, and torn.

Place lettuce leaves on large plate, Top with snow peas. Top with
vinagrette (I spoon this on, a bit heavy to pour on):

Vinagrette: 1/2 cup olive oil, 1/2 tsp salt, 1/2 tsp pepper,
3 shallots minced, 1/4 tsp sage, 1/2 tsp dry basil,
1/2 tsp parsley minced, 1/4 cup red wine vinegar.
