Monday I got a call and an email from some nice folks at ESPN. They wanted to know what 402 BBQ would be serving for the College World Series. I said, "BBQ, plus some fun tailgater specials." She said "BBQ gator tail!? That sounds like exactly what we're looking for! When can we meet for an interview?" I didn't know what to say, so i just said "tommorrow". Well crap, I've only ever fried gator, but i figured I'd give it a shot. Cubed, skewered, wrapped in bacon, and marinated in Alabama white sauce and some Tony's creole seasoning. then I smoked them at 275 for an hour or so, on this nifty little Treager i just bought to help me catch up on some cooking and some sleep. They turned out great! The ESPN people loved 'em too, and this Saturday 402 BBQ is gonna be on national TV!!
