Yes, in the Netherlands it's wednesday evening already. I made vegetarian Indonesian food today (I'm partially of Indonesian heritage).
Here you see: Sambal goreng tempeh (spicy soy cakes), eggs in peanut sauce, curried cabbage and rice.

I've roasted some Chicken drumsticks - don't know what else I'll be having with it yet.

I haven't made this dish in quite some time.

I made a small pot of tomato sauce with sausage and baby Bella mushrooms.

Half went into a casserole of baked spaghetti for dinner tonight and half went into the freezer.

We ordered carry out. I'm having Sesame chicken with pork fried rice, etc. Frank ordered General Tso's.

I'm cooking roast chicken and veges. Roast taters carrots kumara ( sweet potato) pumpkin.
And peas n gravy.

We had cold smoked salmon on bagels with cream cheese, onion, and bagels. There was also some smoked trout spread and dill pickles. I really like having such an easy meal that is so tasty.

We had a meatless tomato sauce over spaghetti and some sliced cukes.

Cook’s Notes:

Although it tasted wonderful, I was not happy with the consistency and colour of the sauce. I know that I put in the mushrooms too early, which led to the colour, and I should have let the sauce reduce more to where I wanted it to be.

The sauce should be more towards a white/pale yellow, and the sauce shouldn’t be as soupy.

MrJade loved it, and it was very delicious - next time I might add broccoli and season it up with some lemon or balsamic because it was very rich.

Cheeseburger with American cheese, fried onions, pickles, hot pepper rings, and ketchup for dinner last night. Probably the same tonight.
