I tend to bake directly on my pizza stone in standard electric oven at 500F. How do I stop the crust from curling? Do I need one of those pizza screens? Pizza Screens - The WEBstaurant Store

When you stretch the dough, does it shrink back? As a side note, I would stay away from the site in your link I had a less than satisfactory experience with them and a defective product.
