This come from old John Eddy back in ought 03. The boy oviously aint no speeling major or minor:)

HO-MADE KAW-CAJUN PICKLED SOSSAGE

1 qt. cider vinegar
1 pint water
4 tsp. pickling spice
1 tsp. mustard seed
1 tsp. celery seed
1 tsp. tumeric
3 Tbsp. sugar
2 Tbsp. salt
2 or 3 bay leaves
1 Tbsp red pepper flakes

Sausage chunks to fill 4 quart jars
8 cloves garlic, sliced thin (2 for each jar)
6-8 sliced jalapenos
2 sliced onions - Texas 1015


Preparation :

Bring brine to a boil and pour over kielbasa or other cooked sausage which has been prickled all over with a fork, cut into bite-sized chunks and
packed into 4 quart jars....along with the jalapenos, garlic and onions.
Seal and cool. Let stand in refrigerator for 2 weeks, allowing it to
marinate & git real good & happy.
