What wines go best with Spanish paella? My recipe will have squid, lobster, Spanish sausage, and mussels. Spanish flan for dessert. What wines do you recommend? Thanks.
If you're going to use a red, choose a wine that is low in tannins like a merlot, pinot noir, or rioja like Andy suggested.
If you're gong to serve a white, then I would suggest a full bodied chardonnay. Light to medium whites like a pinot grigio, sauvingnon blanc, viognier, etc. will get absolutely buried under the aggressive flavors from a dish like paella.
