for a start i will tell u the basic chicken korma recipe,its great served with nan bread or over rice,anyway u like...
CHICKEN KORMA:
2 POUNDS CHICKEN(8 PIECES)
2 MEDIUM ONIONS
5 GARLIC CLOVES
1 tsp of corriander powder
ONE IN PIECE OF GINGER
ONE CUP OF OIL
MIXED WHOLE GARM MASALA(5 WHOLE PEPPER CORNS,5 CLOVES,3 CARDAMOM PODS SPLIT OPEN,2 PIECES OF BLACK CARDAMOMS,2 MEDIUM CINNAMON STICKS,HALF A TSP GROUND NUTMEG)
SALT AND GROUND RED CHILIS ACCORDING TO YOUR TASTE
ONE CUP PLAIN YOUGURT
HALF A CUP OF WHOLE MILK
fry lengthwise finely chopped onion in oil,when its golden in color,take it out from the oil,and make a puree combined with the yogurt and keep it aside,anow in the same oil,fry all the garm masala,when it starts to give aroma,add the chicken pieces and garlic and ginger paste.when chicken starts to get a nice golden color,add yogurt onion mixture.Add salt and chili powder,corriander powder,fry the whole thing for like 10 minutes,add a little water if needed.at the end,add 2 cups of water and let it come to boil,when it starts boiling,add milk and let cook for a couple more minutes.Now remove from flame.cover the lid for 5 minutes.
