Chow means fried. Lo means boiled. Without noodles, the American/Chinese creation is called sukiyaki. With crispy noodles added, it becomes Chow Mein. With soft noodles, it's Lo Mein.

That's what has us frustrated here in Springfield, MO. Few places have Chow Mein on the menu and those who do, do not serve with crispy noodles. :(

Birria Queso Tacos

Ingredients:
  • boneless chuck roast
  • beef short rib
  • ancho chilies
  • guajillo chilies
  • chilies de arbol
  • beef stock
  • cinnamon stick
  • bay leaves
  • cumin
  • black pepper
  • fresh oregano, chopped
  • tomato paste
  • onion
  • cloves garlic
  • Salt to taste
Tacos:

corn and flour tortillas
Oaxaca cheese, shredded
Consomme
Shredded beef
Lime
Cilantro
Onion diced

Lessons learned: best to have a fatty beef mix. Break down the beef. Can use instantpot if needed. De seed the non spicy chiles. Spicy throw in and blend as is after rehydrating. Consume is key to this dish. Reserve fat from broth and douse tortillas in it right before cooking them. Got the Oaxaca cheese from a Mexican grocery store. While they look round in package like mozzarella they are really strings wound up into a ball. It was harder to shred this way until I just did it with my mixer. Once shredded the cheese gets hard fast but melts again no problem.

Results/taste: excellent. This is my go to for 2023. The consume is awesome. Tortilla types do make a taste difference although both are fine. Everyone loved them and asked for more.

Raspberry Creme Brûlée

Ingredients:
Heavy cream
Sugar
Vanilla bean extract
Raspberry
Egg yolk
Salt

Lessons Learned: temper the heated cream mixture into the egg mixture so as to not cook your eggs. Prefer the vanilla bean vs just regular extract here. Keep a close eye on sugar when burning with torch so as to not burn it. Watch for bubbles and keep moving the torch around. Don’t sit in one place for long when torching.

Results/taste: excellent. Although mine came out very creamy even after edges set and I let sit in fridge overnight. May need to cook a bit more. I like it creamy as it came out but traditionally I think the creme is a little more solid. I froze it for 15min before serving which helped a little but custard was still very creamy. Love the raspberry. I think it’s the best berry for this dessert.

Flammekueche aka Tarte Flambee

Ingredients: dough: AP Flour, olive oil, salt, water. toppings: yellow onion, bacon, creme fraiche, gruyere cheese, emmental cheese

Lessons learned: quickest pizza type dough i've ever made. very simple and don't need to proof much. creme fraiche is like a tangy sour cream. since the dough is so thin it doesn't take long to cook at all. pre cook the bacon a little.

Results/taste: very interesting. savory and salty while very light and flaky. would make again.

Horchata de chufa (from Spain)

Ingredients: tiger nuts, water, cinnamon, lemon zest, sugar

Lessons learned: let tiger nuts soak in water a day before to soften them up. best served cold although no ice so as to not water it down.

Results/taste: very refreshing. kind of tastes like 2% cinnamon milk. a bit watery.
