how would one go about making this,thought of just rubbing with some oil and roasting it but what temp.? Or just searing it a little and finish in the oven at 350. Any suggestions?
I make recipe using flank steak, chopped spinach and feta cheese. I pound the steak thin, make a stuffing with the spinach and feta with shallots and breadcrumbs then stuff, roll and tie the steak. I brown it in a skillet and finish in a 400º F oven.

First thing that came to mind is braciole. I would pound it flat or butterfly, add fillings, roll, tie & sear/brown & finish in the oven; or add sauce, cover & complete on the stovetop. Re cooking time, depends on weight and doneness. A thermometer might help.
